Mom-a-licious Frittata

This simple recipe can be doubled (or tripled) to fill a large baking dish to serve for a group breakfast. Make it your own by using your favorite cheese, veggies, an/ or bacon and sausage. Serves 4-6
 

Ingredients:
6 free range eggs
½ cup organic nonfat Greek yogurt  (such as Oikos)
2 tablespoons fresh chopped herbs such as thyme, Italian parsley, chives or a mix
1/3 cup grated cheese, such as sharp cheddar or pepper jack
¼ cup baby tomatoes, cut in half length wise
2 tsp salt
Fresh pepper to taste
Extra virgin olive oil
Pre-heat oven to 400 degrees
1. Crack eggs into a large measuring cup or bowl.
2. Add the yogurt, herbs, cheese, thyme, salt and pepper and whisk together.
3. Oil a small baking dish (you can also use 4-6 small ramekins).
4. Pour in egg mix. Top with tomatoes.
5. Bake for 10 minutes if using a single serving size, 15 minutes if using a 5×7 baking dish.
6. Turn oven to broil and finish for 2-5 more minutes. Remove from oven when the eggs start to get a nice, golden color.

Citrus Sesame Granola Parfait
You can substitute your favorite store-bought granola if you don’t have any of the Momalicious granola in the pantry.
Per serving:
½ cup organic plain yogurt
Drizzle of agave nectar or honey
*lemon zest (optional)
¼ cup Citrus Sesame Granola from Momalicious* (or natural store-bought or bulk food granola)
¼ cup fresh berries
*fresh mint for garnish

Place the yogurt in a pretty glass or small bowl. Top with agave and zest. Layer with the granola and berries.

Citrus and Sesame Granola
Ingredients:
Zest, 2 lemons
½ lemon, juiced
1 orange, zested and juiced
½ cup pure maple syrup (or ¼ cup maple and ¼ cup honey)
1/3 cup extra virgin olive oil
1 tablespoon vanilla extract
2 egg whites
4 cups organic rolled oats
¼ cup whole flaxseed
½ cup raw sunflower seeds
1 cup raw cashews
½ cup raw almonds
¼ cup raw sesame seeds
½ cup unsweetened dried coconut
1 cup dried fruit

The Process:
Heat oven to 350 degrees.
1. Stir zest, juice, extra virgin olive oil, syrup, egg whites and vanilla together in a medium-sized bowl.
2. In a large bowl mix the oats, ½ of the nuts, ½ the sunflower seeds, all the sesame seeds and the coconut.
3. Stir in syrup mixture. Spread thinly on two cookie sheets covered in parchment paper or tinfoil for easy cleanup.
4. Bake for 15 minutes then stir granola on trays with a wooden spoon. Continue to bake for seven more minutes or until golden brown.
5. Remove and cool. Stir in remaining nuts, flaxseed, and dried fruit if using.
6. When completely cooled, store in airtight containers and enjoy for up to a month, or keep in freezer for up to six months.
