domenica talks watermelon!

If you haven’t tried a watermelon salad before don’t be scared!
If you have, you know what a surprising and refreshing dish it can be! This salad is so simple to prepare and an excellent source of vitamin C, vitamin A and lycopene.
 
serves 4-6

ingredients:
4 cups fresh watermelon cubes (aprox 1 small watermelon or 1/2 a large watermelon)
juice of 2 limes
1/2 cup crumbled feta or goat cheese
1/4 cup seeded Kalamata olives
1/4 cup fresh mint leaves

*optional
1/4 cup toasted pine nuts or walnuts
2 tbs extra virgin olive oil
pinch of sea or kosher salt
 
the process
1. place watermelon in a large bowl
2. add cheese, olives, mint leaves and nuts if using.
3. add lime juice, olive oil and salt, Gently toss together and serve immediately or chill and serve up to a half hour after
prepared
