Domenica’s Turkey Chili!

The weather is finally just right and tonight as you’re headed home, stop by the grocery and pick up these ingredients for the most delectable turkey chili for dinner!!

Turkey Chili
2 tablespoons extra virgin olive oil
1 medium yellow onion, chopped
2 tablespoons ground cumin
1 to 3 teaspoons red chili flakes
3 tablespoons fresh garlic, chopped
1 lb. ground turkey breast
1 tablespoon organic soy sauce
1 jar plum tomatoes (whole or diced)
2 15 oz. cans organic black beans
2 15 oz. cans of organic kidney beans
1/4 to 1/2 cup of water or chicken broth

Optional: Jack or cheddar cheese, chopped fresh onion or sour cream for topping

In a heavy-bottomed pot, sauté onion, cumin, and pepper over medium heat with extra virgin olive oil. Do not let onions brown. As onions become soft, about five minutes, add garlic and cook about two minutes. Add ground turkey. Stir and smash up turkey. Add soy sauce. Add tomatoes (if using whole rough chop into quarters). Add beans and water or broth. Bring to a boil, turn down to medium heat and cook for 10 minutes.
Serve with grated sharp cheddar or Jack cheese, chopped fresh onion and sour cream.

Prayer For Favor and Opportunity.

This last week I found myself in a circumstance where I needed to buy a new car. It was hard to see at the time because I was a bit stressed and overwhlemed, but God’s hand was in this experience from the get go. Then yesterday before I left to go to the bank and then to make a deal on this new car, I took time to read from my quiettime, Sparkling Gems. The reading for November 12th was all about God’s favor, opportunity, open doors and the people God uses in our lives.

So, I think it was of no coincidence that I read this following prayer (the prayers come after the study for each day’s reading) on the morning of the day I had to buy a new car. 

“Lord, I ask You to set a great and effectual door of opportunity before me. Please help me recognize when that door opens, for I desire to truly appreciate what You are doing in my life. At the same time, I need You to help me be spiritually discerning so I can differentiate my true friends from opportunists who might come to take advantage of me and steal this victory from my life. Give me spiritually discerning eyes to help me see who is and isn’t with me whenever a great and effectual door is uniquely opened to me for Your purposes. I pray this in Jesus’ name!”

Danny’s 3rd Grade Assignment.

It was written by an 8-year-old named Danny Dutton, who lives in Chula Vista , CA . He wrote it for his third grade homework assignment, to ‘explain God.’ I wonder if any of us could have done as well? 

 EXPLANATION OF GOD:

‘One of God’s main jobs is making people. He makes them to replace the ones that die, so there will be enough people to take care of things on earth. He doesn’t make grownups, just babies. I think because they are smaller and easier to make. That way he doesn’t have to take up his valuable time teaching them to talk and walk. He can just leave that to mothers and fathers.’

‘God’s second most important job is listening to prayers. An awful lot of this goes on, since some people, like preachers and things, pray at times beside bedtime. God doesn’t have time to listen to the radio or TV because of this. Because he hears everything, there must be a terrible lot of noise in his ears, unless he has thought of a way to turn it off.’

 ’God sees everything and hears everything and is everywhere which keeps Him pretty busy. So you shouldn’t go wasting his time by going over your mom and dad’s head asking for something they said you couldn’t have.’

 ’Atheists are people who don’t believe in God. I don’t think there are any in Chula Vista . At least there aren’t any who come to our church.’

‘Jesus is God’s Son. He used to do all the hard work, like walking on water and performing miracles and trying to teach the people who didn’t want to learn about God. They finally got tired of him preaching to them and they crucified him But he was good and kind, like his father, and he told his father that they didn’t know what they were doing and to forgive them and God said O.K.’

‘His dad (God) appreciated everything that he had done and all his hard work on earth so he told him he didn’t have to go out on the road anymore. He could stay in heaven. So he did. And now he helps his dad out by listening to prayers and seeing things which are important for God to take care of and which ones he can take care of himself without having to bother God. Like a secretary, only more important..’

‘You can pray anytime you want and they are sure to help you because they got it worked out so one of them is on duty all the time.’

‘You should always go to church on Sunday because it makes God happy, and if there’s anybody you want to make happy, it’s God!

‘Don’t skip church to do something you think will be more fun like going to the beach. This is wrong. And besides the sun doesn’t come out at the beach until noon anyway.’

‘If you don’t believe in God, besides being an atheist, you will be very lonely, because your parents can’t go everywhere with you, like to camp, but God can. It is good to know He’s around you when you’re scared, in the dark or when you can’t swim and you get thrown into real deep water by big kids.’

‘But…you shouldn’t just always think of what God can do for you. I figure God put me here and he can take me back anytime he pleases.

And…that’s why I believe in God.’

Love from Christie.

Though we’ve never met in person, Christie has become a great encouragement to me through Facebook and by sharing photos on Flickr. She’s an incredible mom and woman with amazing wisdom and insight - after sensing I was going through some personal things, struggling with patience and getting irritated with the “When God, when?!” she sent this email just in time.

“If I’m right about that then I’m here to say I know how you feel… Hopefully, peacefully, impatiently heartbroken.

And it can be tiring to remind ourselves of God’s perfect plan. ESPECIALLY, because it can suck to be alone (even if you have a ton of friends). It can be challenging to want His will for your life and act on it at the same time.

The devil loves to tell us that it’s not going to work out. That we shouldn’t even get our hopes up. That we should be grateful for what we have and that its selfish to want more…

The devil HATES it when we remember truths like Jer 29:11 that tells us that God wants to give us a future and hope. The devil HATES it when we count on God to meet our needs for security, love, and joy. The devil WANTS us to seek those things from our circumstances and other people so we’re ultimately let down and discouraged. The devil WANTS you to forget that our God is before all things and that in Him, He holds ALL things together (Col 1:17)

And when you’re worn out and tired and discouraged the devil does NOT want you to remember that our God renews our strength, guiding us along the right paths in order to bring honor to HIS name (Psalm 23:3) (How lucky are we to be used by God to bring HIM glory! wow!)

God knows you long to obey his commandments and that you want your life renewed with HIS goodness (Psalm 119:40)

He knows your heart, your desires, your dreams and that ultimately you want your heart, desires, and dreams to be His!

He’s got this Liz! He’s all over it! He’s carrying you! He’s loving you with His undeserving grace-filled love!

So my virtual friend - when you find yourself feeling impatient, when you’re tempted to not hope, do not fret or have anxiety about anything but in EVERY circumstance and in everything by prayer and petition with thanksgiving, continue to make your wants known to God (Phil 4:6)

He has never left you. He will never forsake you.

And KNOW that the theif comes only to steal and kill and destroy but our God came so that we can have life, and have it abundantly! (John 10:10)

I’ve learned that my abundant life has only come by knowing the TRUTH of who I am through Christ and who God says He is. When I meditate on the truth, I am FREE from the burdens and discouragement I’m tempted to indulge.

So seek Him girl! Seek Him like you’ve never sought before and your eyes will be opened to so much! And a peace that makes no sense will be all yours!”

Cheeseburger Weekend.

Nothing gets my mouth watering more than a perfect cheeseburger. Typically over holiday weekends it’s easier to justify the indulgence and allow room to fully enjoy the special occasion.

Identity Theft.

A couple years ago I noticed some charges made to my checking account for things I knew I wasn’t paying for. When I looked closer at the actual check online, I saw a lady named Cheryl made fake checks using my account number and was paying her cable and for communication made to someone in state prison.

I can’t even begin to tell you how much I dislike finances or checking my bank account. But I’m so glad for the ability to moniter things online to catch criminals who are invading our lives, our privacy and our bank accounts. So if you’re like me and you moan at the thought of having to watch even closer, know that there are some things you can do now to prevent the even bigger headache of fixing your credit and getting your accounts resituated!
